Do you have a list of foods with problematic calcium content?

Basically, it's safe to assume anything with calcium is going to give you issues - it doesn't take much calcium for the reaction to take place.

Can the pearls be frozen for longer storage?

Yes, they can be frozen. If you store them in the liquid they're created from, they'll stay firm for a couple of days without having to freeze them.
