To be classified as "high carbon", steel must have between 0.6% and 1.7% carbon by weight. This particular range of carbon weight within a steel blade gives it a sharper, finer cutting edge and greater wear resistance than lower carbon steels, but anything higher makes the steel too brittle, and easily shattered.

This high carbon steel knife from Damask Co. is properly classified high carbon, for long-lasting sharpness and durability, and has also been given a unique black coating for an extra aesthetic edge.
