This ham blend mixes a Ibérico pig with a 100% Duroc pig in compliance with the Iberico Quality Norm. This blend allows for lower fat content with great visual marbling, delicious flavor that's milder than other varieties and a fantastic coloring.

After each carving session, it is recommended to cover the carved area with clear food wrap (use a new piece every time) in order to keep the meat moist. If the leg is exposed to sunlight, place a cloth on top of the wrap. If mold appears, use vegetable oil and a paper towel to brush the area, carve a thin layer to guarantee no mold is ingested and worry no more. Mold plays a key role during the curing process. It only appears on the surface.

When will the meat expire once opened? Can I freeze it after opening?

Freshness goes away after 3 months average. It also depends on storage conditions. Good conditions are keeping the leg in a dry and cool area.

Freezing the meat is an option. But it would affect its quality.
