100% Ibérico Acorn-fed Ham (Free Range)
Ibérico ham is known as the jewel of Spanish gastronomy. The Ibérico pigs are the direct descendants of wild boars that roamed the Iberian peninsula for centuries. Fermin uses exclusively Ibérico pigs, raised free range on a vegetarian diet, to create a finished product that is superior in taste, marbleization, and texture. Each ham is cured between 36 and 48 months using artisanal methods in La Alberca, Spain, a Natural Reserve declared a World Heritage.

Keep your ham in a dry and cool place away from sunlight. After each carving session it is recommended to cover the carved area with clear food wrap (use a new piece every time) in order to keep the meat moist. If the leg is exposed to sunlight, place a cloth on top of the wrap. If mold appears, use vegetable oil and a paper towel to brush the area, carve a thin layer to guarantee no mold is ingested and worry no more. Mold plays a key role during the curing process. It only appears on the surface.

Sliced Jamon Cebo Ibérico
In this 50% line, Fermin crosses a 100% Ibérico pig with a 100% Duroc pig in compliance with the Ibérico Quality Norm. The result is a lower fat content with great visual fat marbling. It offers great flavor and fantastic color, but less intense than other categories. Each ham is cured before slicing for 36 months using artisanal methods in La Alberca, Spain, a Natural Reserve site declared a World Heritage.
