Glendalough Double Barrel Irish Whiskey is a globally awarded, single grain whiskey that has been aged twice—first in American oak Bourbon barrels and again in Spanish oak Oloroso Sherry barrels. While the Bourbon barrels brings a sweetness and smooth vanilla notes, the Oloroso casks layer on depth of dried fruit and Spanish oak spices. D drink it neat, on ice, or with soda. Glendalough forages wild plants from the mountains around the distillery to make this extraordinary Wild Botanical Gin. These sustainably picked plants go fresh (not dried) into the still within hours of foraging. They are painstakingly slow-distilled to tease out delicate flavors in tiny batches. The cut-points are decided batch by batch, by smell and taste (never timed or automated) as if each batch is the first, putting this gin on a whole other level of flavor. The knowledge, experience and effort that goes into each bottle is what makes it so special.
Glendalough Rose Gin is a fresh, rose-petal gin first made to honor the head distiller’s mom, Rose, at his little brother’s wedding. Rose had recently passed away, and this was his way to have her there in spirit—literally. Carefully-tended flowers from her rose garden are slowly vapor distilled with wild roses and plants from the mountains around the distillery to make this an intensely floral gin. After distilling, the gin is then further infused with even more roses to deepen the flavors and give it its lovely pink hue.
