The first recorded definition of a cocktail in history would later become the Old Fashioned, in 1881, in Louisville Kentucky in honor of a mixologist who then brought the recipe to the Waldorf-Astoria Hotel bar in New York City. The cognac’s warmth and spices coupled with a dash of bitters and syrup, blend together perfectly. The orange garnish is mere fashion.

The Prince of Wales, a Cognac connoisseur and the future King George IV of Great Britain, personally requested a “Very Special Old Pale” from the House of Hennessy. Delivered in 1818, this new classification of V.S.O.P. became a benchmark for all Cognac makers, denoting elevated quality and aging.
