Under the leadership of Keith Derkatz, Katz Knives has been making its own brand of fixed, folding, survival, and pocket knives since 1991. In addition to an array of sleek, sporting designs, Katz uses its own proprietary XT80 and XT70 Stainless Steel, which tests at 56-59 on the Rockwell “C” scale, and is a particularly resilient blend that retains an edge for a lifetime.
