Product Description
The Bunka Petty knife is the Japanese equivalent to a small utility knife. It is ideal for small and detailed cutting tasks, where a full-sized chef knife would be too cumbersome. Just like the common Petty knife, the Bunka Petty has a medium-sized blade with a flat profile; however, their blade tips are shaped very differently. Bunka knives are recognizable from their “reverse Tanto” profile, also called “K-tip”, which makes them more precise than a classic rounded blade.
The Bunka Paring knife is the most-used knife in a kitchen, right after the chef knife or Gyuto. While almost everything on the cutting board can be done with the chef knife, all precise, off-the-board cutting tasks are performed with the paring knife.
The Kiritsuke chef's knife can perform versatile functions and is the favorite go-to knife for many Japanese chefs. In fact, in most fine restaurants only the head chef is allowed to use them, therefore the Kiritsuke is often considered to be a symbol of expertise and status.
