Crafted with Damascus steel, the Route83 Signature Brisket Carving Knife was designed to provide enhanced accuracy and precision when cutting brisket and larger cuts of meat. The Signature Boning Trimming Knife is expertly balanced to provide high maneuverability. It’s extremely versatile and can be used to bone, trim, and even slice with ease.

The handle has been hand-shaped from natural wood. Each knife is unique as no two pieces of wood are the same. The shape of the wood handle is multi-dimensional so there is a natural grip between the first and second fingers making it easier to control and fit in your hand. The stainless steel handle caps add stability, strength, and act as a counter weight for even weight distribution from tip to end.

Damascus steel can rust if not cared for properly. Do not keep Damascus steel in a leather sheath for long periods of time, as the leather can cause the steel to rust. Please be aware Damascus steel products will arrive fully coated in a protective, non-toxic mineral oil, which can be easily washed off before use. Damascus steel should be regularly oiled with any household oil over the course of its life to prevent corrosion.
