Product Description
The Shinobu Distillery is located in the beautiful Niigata prefecture on the North side of Japan. In the distillery lives a passionate whisky lover and an experienced brewer, Mr. Ken Usami, who has been brewing Niigata Beer in this idyllic location for more than twenty years. In 2017, Usami became the first person licensed to distill whisky in the entire prefecture. An innovator at heart, he sources premium spirits and finishes them in rare, Mizunara oak with pure, natural, local water to showcase the unique flavors of Japan.
”Shinobu” means “forbearance” in Japanese, symbolizing the spirit of the samurai. Just like the practice of the samurai, making great spirits takes time, patience, and persistence.
The Shinobu 10 Year has spent most of its time aging in ex-Bourbon and ex-Sherry casks, and is finished in delightfully expensive Mizunara oak wonder-barrels. It is a blend of 100% malt spirits with a masterfully balanced profile. Whisky lovers will notice the influence of the Mizunara right away in the dense, wood-forward notes.
Tasting Notes
— Color: Ruddy bronze
— Aroma: Sandalwood, vanilla, and oak with hints of espresso, mocha, and citrus zest
— Palate: Leads with creamed coffee and vanilla fudge with notes of bright citrus and deep earthy oak
— Finish: Full and round with apricots and more wood tones
The Shinobu 15 Year has a hint of sweet malt with deep wood aromas from the mizunara oak barrels. It is richer in taste than the 10-year-old whisky. The sweet aftertaste is outstanding; barrel brings out different levels of spice flavors. Deep floral woody scent is also full of vitality.

— Palate: Oily, ripe fruit, lemon peel, leather, cinnamon, ginger
