The Suraisu Kyoto is a multipurpose traditional Japanese blade. From use as a Yanagi (fish slicer) to an Usuba (vegetable knife), the Suraisu Sakana Knife is truly versatile. The lightweight knife features a 67-layer Damascus steel blade for exceptional strength, durability, and stain resistance. The Kyoto provides a perfectly engineered balance and gently encourages a comfortable and proper pinch grip. Its premium rosewood handle is highly impervious to heat, cold and moisture. The ergonomic handle shape ensures superior hand control, agility, and comfort.
The ruthlessly sharp double bevel edge is hand finished to a mirror finish within a 15° degree angle. It is sharpened to using the traditional Japanese Honbazuke method where the blade is sharpened and polished by hand in three stages. Its precision-forged blades feature an ultra-premium imported Japanese VG-10 cutting core at 60-62 Rockwell hardness for unrivaled performance and incredible edge-retention. The precisely tapered blade minimizes surface resistance for a buttery smooth cutting motion.
