“I grew up learning how to prune, when to till the cover crop, and when to harvest from my father. Each vintage is different in the vineyard, and he taught me how to adapt as it all starts there. He is one of the best, and I’m humbled to take all his teachings in the vineyard and cellar and adopt my own style of winemaking. Big, bold, fruit-forward, yet still balanced and refined, the 2015 TOBIAS Formation Red Blend is a modern wine, neither an austere European style, nor over the top "fruit bomb." Aromas of blueberries, black currants, rich cooked fruit, with a hint of vanilla spice, give way to a complex array of flavors including dark cherry, blackberry, red cassis, tobacco leaf, cedar and chocolate. The finish is long with tight but mellow tannins. Pair this wine with ribs, steak, game, and robust cuts of nearly any red meat. It goes well with rich cheeses, chocolates (dipped in strawberries or not), friends talking, or a quiet evening with a book.
The 2016 TOBIAS Formation Red Blend is enticing and approachable, with opulent aromas of blackberry and black currant fruit that lead into an opulent palate with subtle vanilla, spice, dark chocolate and coffee culminating in a long, silky finish. Pairs beautifully with barbeque, a classic steak, or a savory and hearty salad.
