You just need to keep holding the button to translate the voice and release the button when finished.

How does it know what language to use?

You have to select the language you want to translate. The setting has to be done in the app.

Can you use a headset with this product?

No, it does not connect with a headset.

If there is no WiFi while traveling anywhere in the world how will it work?

Currently, it does not support offline translation. You do need an internet connection for it to work.

Will it translate from someone talking on the phone?

If you put the phone on speaker and the voice is loud enough, then translation should work.
